Back to school means back to packing lunches. We know that mornings get hectic – the kids won’t get up, someone can’t find their favourite socks, and lunches are often left until the last minute. Fear not – we have your back! These ridiculously easy lunches can be thrown together in 5 minutes from basic ingredients and leftovers.
1. The 30-Second Healthy Stir Fry
Throw leftover cooked noodles in a microwaveable container and shake some frozen vegetables in with them – the veggies will thaw by lunchtime. Spoon a little pasta or BBQ satay sauce on the side of the noodles so that your kid can stir it in. You can also substitute leftover cooked rice for the noodles.
2. Pizza Bagels
Have some spare bagels? Throw one in your kid’s lunch with some cold cut sandwich meats (pepperoni if you have it, but anything works), a slice of cheese, and bit of pizza sauce. Boom – pizza bagel!
3. Bento Box
Bento Boxes are Japanese boxed lunches that combine small portions of a variety of foods together. You can make a Bento Box style lunch out of little bits of leftovers or whatever you have in the cupboard.
Try putting a few crackers, some cheese, a few slices of deli meat, and a side of fruit together in a lunch box. Or slice up a pita, spoon in some tzatziki, and add a small fruit salad.
4. BBQ Chicken or Turkey Sandwich
If you have leftover chicken, turkey, or a rotisserie chicken in the fridge, throw a handful on a hamburger bun, and you’re done. Spoon a little BBQ sauce on the meat, or in a side container. If you have an extra 10 seconds and lettuce, you can add that as well.
5. Cream Cheese Sandwiches
Cream cheese sandwiches are not just finger food at baby showers! There are so many ways to make these delicious sandwiches, but keep in mind they work best on whole grain, seedy bread. You can do a classic cream cheese and cucumber combo, or try cream cheese and jam. Cream cheese and sliced salami works very well for a meatier sandwich. Throw in a side of fruit and nuts and your kid is good to go!
